👍 Pears, Apples – fruits great for poaching or making into crumbles. For winter salads Cranberries, Elderberries, make an interesting addition. Medlar and Quince and a little bit of seasonality to a cured meat board.
👍 Vegetables tend to be kept warm by soil so we start to see a lot of root-based veg – Beetroot, Butternut Squash and Celeriac. Artichoke is also banging and so get making Artichoke and Stilton soup.
👍 Veg that is prime right now – Celery, Chicory, Chillies, Horseradish, Jerusalem Artichoke, Kale, Kohlrabi, Leeks, Marrow, Parsnips, Maincrop Potatoes, Pumpkin, Salsify, Shallots, Swede, Sweetcorn, Tomatoes.
👍 The king and queen of mushrooms are here Black Truffles, White Truffles. Then other little delights Turnips, Watercress, Wild Mushrooms. All veg has earthy hearty flavours and a bit of pepper and spicy to keep you feeling nice as nights get cold.
👍 As the days get shorter we get inspiration from the squirrels – Almonds, Brazil Nuts, Chestnuts, Chives, Cob Nuts, Hazelnuts and Walnuts are all in season.
👍 As it turns frosty the more robust herbs are still here to stay – Rosemary, Sage, Sorrel.
👎 Things that have come to an end are Blackberries, Strawberries, Raspberry, Gooseberry, Apricot, Cherry, Damson. So if you have any left time to start making jam and preserves.
👎 Other fruit coming to an end – Lemons, Oranges, Peaches, Watermelon.
👎 Also writing us a Dear John letter – Carrots, Courgette, New Potatoes are gone. The delicate leaf-based salads are going too – Spinach, Watercress. Beans – both Broad and French, Peas.
👍 Winter is all about long walks and belly-busting grub that is satisfying, so all the best meats for roasting are in – Beef, Duck, Goose, Grouse, Guinea Fowl, Lamb, Mallard, Partridge, Pheasant, Rabbit, Turkey, Venison, Wood Pigeon. If you want to try something a little different and unusual you can add Hare to your menu.
👍 Although we tend to serve less fish in winter a lot of the less delicate fish is off and the more chunky ones are in season – Dover Sole, Dab, Grey Mullet, Gurnard, Haddock, Halibut, Hake, Lemon Sole, Plaice, Pollack, Wild Sea Bass, Sea Bream, Skate, Turbot, Mackerel, Monkfish.
👍 Let’s not forget our other seafood friends – Clams, Crab, Lobster, Mussels, Oysters, Prawns, Squid, Winkles.
👎 A lot of the breeding fish become unavailable like Tuna and Salmon Cod Skrei, Spider Crabs, Sea Trout. I have also put Cod here too as it has lost its sustainability status this month.
